Revive & Thrive Sample Menu - Spring & Summer
Revive & Thrive Project provides 7 freshly prepared, refrigerated meals to our clients each week, with home delivery on Wednesday evenings. We prepare a delicious, healthy, and unique menu each week with very few repeated items during the course of a 12-week meal delivery schedule. A typical meal delivery includes 4 entrees, a yogurt parfait, soup, salad, and a refined sugar-free dessert.
Entree: Sweet Potato Black Bean Quinoa Bowl
Roasted sweet potatoes with black beans, corn, bell peppers, red onion, and avocado arranged on a bed of quinoa. Served with house-made green goddess dressing.
Entree: Turkey Black Bean Enchilada Casserole with Street Corn Salad
Layers of whole wheat tortillas, Monterey Jack cheese, and house-made enchilada sauce stuffed with cauliflower, bell peppers, black beans, and lean ground turkey. Garnished with fresh cilantro and served with a side of lime and herb-infused street corn salad.
Entree: Baked Chicken with Smoky Pinto Beans & Collard Greens
Spice-rubbed and oven-roasted chicken drumsticks with Southern-style, smoky pinto beans. Served with a side of slow-cooked, flavorful collard greens mixed with onions, tomatoes, and garlic.
Entree: Roasted Broccoli Quinoa & Chickpea Bowl
Red quinoa mixed with roasted broccoli, chickpeas, dried cranberries, sunflower seeds, and fresh herbs. Dressed with a house-made maple tahini sauce and served with a side of fresh mixed berries.
Salad: Balsamic Cucumber Salad
Locally-sourced cucumbers, tomatoes, and roasted red bell peppers topped with a house-made balsamic vinaigrette, black olives, and feta cheese.
Soup: Moroccan Chickpea Soup
Vegetarian soup packed with kale, chickpeas, fire-roasted tomatoes, and carrots. Spiced with garlic, cumin, red pepper, cinnamon, and ginger for a flavorful kick.
Yogurt Parfait with Pineapple & Roasted Nuts
Vanilla and honey-infused Greek yogurt with pineapple chunks for a tropical twist. Topped with cinnamon-maple roasted almonds, walnuts, and hazelnuts.
Dessert: Blueberry Chia Pudding
Chia seeds soaked in almond milk, honey, and blueberry puree to create a refreshing, light pudding. Topped with fresh blueberries and chopped almonds - the perfect summertime dessert.
